If you are talking about looking or turning green, this means in simple terms to experience some emotion, like if you turn blue when you are sofocated with no air. Usually green is anger or frustration, like if you are sooooo mad you turned green (like Hulk!) ... it is one of those things that are not translated so easy, not so much because of the literal meaning of the word but of the whole cultural context. 
Now, if you say someone is green or still green this means that he/she is not mature enough. Like oranges, when they are not ready yet, they are still green.
